Duck foie gras cream

A duck foie gras cream with a light, smooth texture, made with nothing but duck and 60% plain foie gras. Spread on a cracker or toast, it makes a ready-to-serve starter for entertaining.
Les Canardises prepare it in the cannery on their farm in Saint-Ferréol-les-Neiges, on the Côte-de-Beaupré, where the ducks are raised outdoors.
Format: 140 g can.
Ingredients: foie gras from free-range duck, milk, fine duck fat, duck liver, eggs, salt and pepper, spices.
Allergens: contains milk and eggs.
Serving suggestion: refrigerate the can for 3 hours before serving, then let it rest at room temperature for 15 to 20 minutes before opening to make unmoulding easier. Remove both lids and gently push toward the wider end. Spread the cream on toast, canapés or crackers, such as pistachio or fig crackers, or use it to fill small choux pastries for the aperitif. Serve with onion confit, fruit jelly or jam, fresh figs or pears. For wine: a dry red, a fine white Burgundy, a Pacherenc du Vic-Bilh or a Jurançon.
Storage: refrigerated; keeps 3 to 6 days after opening.
Origin: made in Saint-Ferréol-les-Neiges, in the Capitale-Nationale region.
